When the water in the lower chamber is heated, pressure builds up, forcing the water through the ground coffee and up into the upper chamber.

The result is an intense and concentrated moka pot coffee, but the brewing takes place at a lower pressure than classic espresso.

Can the Bialetti Rainbow be used on induction?

Not directly.

The Rainbow is made of aluminum and is therefore not directly compatible with induction cooktops.

If you have induction, you can use the Bialetti Induction Plate 13 cm.

The induction plate is placed between the induction field and the espresso maker, making it possible to heat the aluminum pot on a compatible induction stove.

What grind size should be used?

A medium-fine grind is a good starting point for a moka pot.

The coffee should be:

• finer than regular drip coffee
• coarser than coffee for a traditional espresso machine
• gritty rather than powdery fine

Fill the filter basket loosely and evenly with coffee.

The coffee should not be tamped.

If the brewing process is very slow, or if the coffee becomes bitter, you can try a slightly coarser grind.

If the result is too thin, you can try a slightly finer one.

A good coffee grinder makes it easier to adjust the grind and repeat a good result.

How to use your Bialetti Rainbow

1. Fill the lower chamber with water
Fill with water to just below the safety valve.

2. Insert the filter basket
Place the filter basket into the lower chamber.

3. Add coffee
Fill the filter basket loosely and evenly with medium-fine ground coffee.

The coffee should not be tamped.

4. Screw the espresso maker together
Screw the upper and lower parts firmly together.

Avoid using the handle as leverage when tightening or loosening the pot.

5. Place the Rainbow on the stove
Use low to medium heat.

On gas, the flame should be kept under the base and not go up along the sides of the pot.

6. Remove the pot from the heat
Once the coffee has risen to the upper chamber, remove the pot from the heat.

Avoid letting it sit and sputter for longer than necessary.

Which coffee beans are suitable for a moka pot?

You can use different roast levels depending on the taste you prefer.

Medium-roast coffee beans are a good starting point if you want a balance between sweetness, body, and the character of the coffee.

If you prefer a more intense and classic flavor profile, you can try dark-roast coffee beans.

You can also experiment with lighter roasts if you prefer more fruitiness and acidity.
