What is Hario Pegasus?
Hario Pegasus is a pour-over coffee brewer from Japanese brand Hario.
The ground coffee is placed in a paper filter inside the dripper, after which hot water is poured over the coffee. The water passes through the coffee and filter, running directly into a cup or serving pot.
Pegasus uses trapezoid-shaped filters instead of the cone-shaped filters known from the Hario V60.
This changes the geometry and flow rate of the brewer, giving Pegasus its own way of handling extraction.
Hario Pegasus 01, 02 or 03 – which size should I choose?
Pegasus is available in three sizes.
Hario Pegasus 01 – 1 to 2 cups
Hario Pegasus Dripper 01 is the smallest model.
Hario specifies it for 1–2 cups, making it an obvious choice if you usually brew coffee for yourself or two smaller cups.
For this model, you need Pegasus paper filters size 01.
Hario Pegasus 02 – 2 to 4 cups
Hario Pegasus Dripper 02 is the medium size.
Hario states the capacity is 2–4 cups, making it a versatile choice for regular home brewing.
For this model, Pegasus paper filters size 02 are used.
Hario Pegasus 03 – 4 to 7 cups
Hario Pegasus Dripper 03 is the largest dripper in the series.
The official capacity is 4–7 cups, so the 03 is relevant if you often brew a larger batch of coffee at once.
The Pegasus 03 uses paper filters size 03.
Hario Pegasus or Hario V60?
Both systems are developed by Hario and used for manual filter coffee, but they do not function exactly the same way.
Hario V60 uses a cone-shaped filter and is known for giving the brewer significant influence over the flow rate through factors such as pouring speed and grind size.
Pegasus, on the other hand, uses trapezoid-shaped paper filters and is designed for a slower flow rate.
This does not mean that one is better than the other.
V60 is ideal if you want to work very actively with pouring technique and flow.
Pegasus is interesting if you want a more forgiving pour-over brewer with a more controlled flow.
Hario Pegasus for beginners
Pegasus is particularly interesting if you want to start with pour-over coffee.
In manual coffee brewing, the pouring technique can have a significant impact. A very fast flow rate can make small differences in pouring and grind size more noticeable.
The slower flow of the Pegasus makes brewing more forgiving.
You still need to be aware of coffee quantity, water quantity, and grind size, but the brewer is a great place to start if you want to learn manual filter coffee.
Hario Pegasus paper filters
Pegasus uses its own trapezoid-shaped paper filters.
It is important to choose the size that fits your dripper:

Hario Pegasus glass pots
You can brew directly into a cup, but Hario has also developed serving pots for the Pegasus series.
The Pegasus Server is available in, among others:
300 ml – suitable for smaller brews
600 ml – the medium size
1000 ml – for larger brews
Hario manufactures the pots in heat-resistant glass, and the larger 600 and 1000 ml models have a practical capacity of 600 and 1,000 ml, respectively.
A serving pot is especially practical if you are brewing several cups at once or want to mix the entire brew before serving.
What grind size should I use for Hario Pegasus?
A good starting point is a medium grind, after which you adjust based on taste and flow rate.
If the water runs through very quickly and the coffee seems thin or underdeveloped, try a slightly finer grind.
If the brewing process is very slow, or the coffee tastes harsh and bitter, a coarser grind might be worth trying.
There is no single grinder setting that works for all coffees.
If you have your own coffee grinder, you can adjust the grind size according to the specific coffee and the size of the brew.
Use a coffee scale for Pegasus
A coffee scale makes it significantly easier to repeat a brew.
When both coffee and water are weighed, you can change one parameter at a time and better understand what affects the taste.
You don't need to make the brewing process complicated. But if you find a recipe you like, a scale makes it easier to make the same coffee next time.
Do I need a gooseneck kettle?
You can brew with the Pegasus without a special pour-over kettle.
However, a kettle with controlled pouring can make it easier to manage where and how quickly the water hits the coffee.
This is especially useful if you want to work more systematically with pour-over.
At the same time, the Pegasus is more forgiving than some faster pour-over systems, so you don't necessarily need to buy all the extra equipment from the start.
Which coffee beans are suitable for Hario Pegasus?
The Pegasus can be used with many different coffee beans.
Light-roasted coffee beans can be interesting if you want to highlight fruitiness and the coffee's origin character.
Medium-roasted coffee beans often provide a more balanced combination of sweetness, body, and acidity.
You can also experiment with dark-roasted coffee beans if you prefer more body and a more distinct roasting character.

How to get started with the Pegasus
Start simple.
Use a fixed amount of coffee and water, and keep most variables the same from brew to brew.
Then taste the coffee and adjust the grind size first and foremost.
If you change coffee, grind size, dosage, temperature, and pouring technique all at the same time, it becomes almost impossible to know what made the difference.
The most important thing is therefore not to hit a universal “perfect Pegasus recipe”, but to find a brew that suits the coffee you are using.
