What does baked mean?

Baked

In the world of coffee, "baked" refers to an undesirable flavor profile that occurs during the roasting process. It happens when the coffee is overheated or roasted for too long at low heat, resulting in a flat, dull, and lifeless taste devoid of sweetness or acidity. Baked coffee can often taste bready or biscuity and lacks the complexity and depth that properly roasted coffee offers.
