The Sage model THE DUO-TEMP® PRO (BES810) is an espresso machine designed with an automatic water purge function. This function ensures that the water for coffee extraction is always at the perfect temperature, even after you have frothed milk or dispensed hot water. Excess water after milk frothing or water dispensing is automatically directed to the drip tray, so there is no risk of the coffee being burnt in the filter. The drip tray has a built-in indicator that tells you when it is time to empty it.
The machine's low-pressure pre-brewing system adds water to the filter at a pressure of about 2 to 4 bar. This allows the coffee to be saturated with water, which helps create an even extraction at the full pressure that follows, ensuring your espresso is brewed more consistently. The even extraction gives you more control and, ultimately, a better espresso.
The coffee machine is equipped with a Thermocoil heating system, an integrated system that quickly heats the water to the desired temperature. The water flows through a metal tube, where it reaches an optimal and constant temperature – crucial for preparing the perfect cup of coffee.
