Should freshly roasted coffee beans be left open?
No.
Freshly roasted coffee beans do not need to be in an open container to degas.
That is precisely one of the functions of the one-way valve: the gas from the coffee can escape while the bag remains closed.
This makes a valve bag more practical than leaving the coffee open after roasting.

Can the valve bag be used for ground coffee?
Yes, the valve bag can also be used for ground coffee.
However, ground coffee has a much larger surface area than whole coffee beans and therefore changes more rapidly after grinding.
If possible, we generally recommend storing the coffee as whole beans and only grinding the amount you need for brewing.
