How to make good coffee with a moka pot / espresso pot
A moka pot is a simple way to brew intense and full-bodied coffee on the stove. In Denmark, it is also often called an espresso pot or mocha pot, and the Bialetti Moka Express is arguably the most famous example.
Although it is often called an espresso pot, a moka pot does not make traditional espresso. Instead, it brews a concentrated coffee with more body and intensity than regular filter coffee.

How to do it
- Unscrew the moka pot.
- Fill the bottom chamber with water up to just below the safety valve.
- Insert the coffee funnel.
- Fill the funnel with ground coffee.
- Distribute the coffee evenly, but do not press or tamp it.
- Make sure there is no coffee on the rim where the pot needs to seal tightly.
- Screw the moka pot together firmly.
- Place it on low to medium heat.
- When the coffee begins to flow into the top chamber, the stream should preferably be calm and steady.
- Remove the moka pot from the heat as the brewing nears the end and the coffee starts to bubble or sputter.
- Optionally stir the coffee gently in the top chamber and serve immediately.
What is a moka pot?
A moka pot is a coffee brewer that uses heat and pressure to force water through ground coffee.
It basically consists of three parts:
• A bottom chamber for water
• A funnel with the ground coffee
• A top chamber where the finished coffee collects
When the water is heated, the pressure in the bottom chamber rises. This forces the water through the coffee bed and up into the top section.
This results in a concentrated and full-bodied coffee.
Moka pot, mocha pot, or espresso pot?
The names are often used for the same type of coffee brewer.
In Denmark, the term "espressokande" (espresso pot) is very common, while "mokapot" and "mokkakande" (mocha pot) are also used.
The Italian term "moka" is especially known through the Bialetti Moka Express.
Technically, the term "espresso pot" is slightly misleading because the brewer does not make traditional espresso.
An espresso machine brews at significantly higher pressure. However, moka pot coffee has a concentration and body that makes it suitable for those who want a stronger coffee than regular filter coffee.
Which coffee is best for a moka pot?
You can use many different coffee beans in a moka pot.
For a classic, full-bodied mocha coffee, medium or dark roasted coffee beans are a good starting point.
Medium roast coffee can provide a good balance between sweetness, body, and the coffee's original character.
Dark roast coffee typically provides a more intense cup with clearer roast character and lower perceived acidity.
You can also use light roast coffee if you prefer more fruitiness and acidity, but it may require a little more experimentation with grind size and temperature.
The most important thing is to choose a coffee you like and then adjust the brewing according to taste.
How finely should coffee be ground for a moka pot?
For a moka pot, coffee should normally be ground medium-fine.
This typically means:
Finer than regular filter coffee, but coarser than coffee for a traditional espresso machine.
The coffee should not be so fine that it becomes compact and restricts the water's passage through the coffee bed.
If the coffee becomes very bitter or the brewing is very slow, you can try a slightly coarser grind.
If the result becomes thin and lacks intensity, you can try a slightly finer setting.
A coffee grinder makes it easier to adjust the grind size step by step.
How much coffee should you use in a moka pot?
Unlike V60 and filter coffee, it does not always make sense to use a fixed ratio like 60 grams of coffee per liter of water.
A moka pot is designed around the size of its water chamber and coffee funnel.
Fill the coffee funnel with ground coffee so it is evenly filled, but without pressing the coffee together.
The water is filled to just below the safety valve.
The individual moka pot therefore largely determines both the amount of water and coffee.
Should coffee in a moka pot be tamped?
No.
The coffee should not be tamped like espresso.
Fill the funnel and distribute the coffee reasonably evenly, but let it lie loosely.
If you press the coffee together hard, you increase the resistance for the water unnecessarily.
Bialetti themselves recommend that the coffee be filled loosely into the filter funnel and not pressed together.
How much water should go into a moka pot?
Fill the bottom chamber with water to just below the safety valve.
The safety valve must not be covered by water.
How much water this corresponds to depends on the size of your moka pot.
It is therefore better to use the safety valve as a reference than to try to use the same amount of water in different sizes of espresso pots.
Cold or hot water in a moka pot?
There are different methods.
Bialetti's official instructions are based on cold water in the bottom chamber followed by heating on low to medium heat.
Some coffee enthusiasts start with already heated water instead to reduce the time the coffee pot spends on the stove.
Both methods are used, but if you want to follow the manufacturer's procedure, you should follow the instructions for your specific moka pot.
The most important thing is to control the heat during the brewing itself and avoid very intense heat.
What heat level should you use?
Use low to medium heat.
The coffee should preferably come out of the tube into the top chamber calmly and evenly.
If the coffee sprays violently very early in the brewing, you are likely using too much heat.
On a gas stove, the flame should not extend beyond the sides of the moka pot. Bialetti also recommends low to medium heat.
When is moka pot coffee finished?
Towards the end of the brewing, the stream changes.
The coffee typically starts to become lighter, and you can hear a clearer bubbling or sputtering sound.
Here, the moka pot should be removed from the heat.
If you let it continue violently on the stove, the last part of the brew can contribute a harsher and more bitter taste.
Bialetti also recommends removing the pot from the heat when it is full, rather than letting it continue to boil.
Why does my moka pot coffee become bitter?
Bitter coffee can be caused by several things.
Try, among other things, to:
• Use lower heat
• Grind the coffee slightly coarser
• Remove the pot from the heat earlier
• Avoid tamping the coffee
• Keep the moka pot thoroughly clean
• Try a less dark roast
Change only one thing at a time if possible.
Then it is easier to find out what improves the result.
Why does the moka pot coffee become thin or sour?
If the coffee lacks body or seems very sharp, the grind may be too coarse.
Try grinding slightly finer first.
It can also be due to the coffee beans. A light-roasted and naturally fruity coffee will, for example, be perceived differently than a dark-roasted espresso blend.
Therefore, you should not automatically try to remove all acidity.
The goal is a balance between sweetness, acidity, bitterness, and body that suits your taste.
Which size moka pot should I choose?
Moka pots are usually stated in the number of cups.
This can be confusing because one mocha cup is significantly smaller than a standard coffee mug.
A Bialetti with, for example, 3 or 6 cups does therefore not produce three or six ordinary mugs of coffee.
Always check the actual capacity of the individual model when choosing size.
This is especially relevant if you want to use the coffee as a base for milk drinks or brew for several people.
Moka pot for induction
Not all moka pots work on induction.
The classic Bialetti Moka Express is made of aluminum and generally does not work directly on a standard induction stove. Bialetti also states that the traditional Moka Express is not intended for induction.
If you have induction, you must choose a model that is specifically compatible with induction or use a suitable induction adapter.
Always check the compatibility of the specific size and model.
Aluminum or stainless steel?
The classic Bialetti Moka Express is made of aluminum.
There are also moka pots in stainless steel.
Stainless steel is used, among other things, on models that can be compatible with induction, while aluminum provides the classic Moka Express design.
The choice is therefore about heat source, design, and personal preferences.
Both materials can be used to make good moka pot coffee.
Can a moka pot be used for cappuccino and latte?
Yes.
A moka pot does not make real espresso, but the concentrated coffee works fine as a base in milk-based coffee drinks.
You can, for example, use it for:
• Cappuccino
• Café latte
• Latte macchiato
• Flat white-inspired milk drinks
Froth or heat the milk separately and combine it with the freshly brewed moka pot coffee.
How to clean your moka pot
Let the moka pot cool down after brewing.
Unscrew it, remove the coffee grounds, and clean all parts.
Follow the cleaning instructions for your specific model, as different materials may have different requirements.
For the classic Bialetti Moka Express, the manufacturer recommends hand washing with warm water.
Also ensure that the filter, safety valve, and gasket are kept clean and in good condition.
The gasket is a wear part and must be replaced when it becomes hard, damaged, or no longer seals tightly.
