What is an Affogato? Recipe with espresso and vanilla ice cream

Affogato is a simple Italian coffee dessert where hot espresso is poured over cold gelato or vanilla ice cream.

The combination provides both temperature and flavor contrast:

hot and intense espresso + cold, sweet, and creamy ice cream.

A classic Affogato therefore requires only two things:

  • good espresso
  • good vanilla ice cream or gelato.

It only takes a few minutes to make, but the quality of both the coffee and the ice cream has a major impact on the result.

The espresso is poured over the ice cream immediately before serving.

Eat the Affogato with a spoon while the ice cream slowly melts together with the coffee.

If you want more coffee flavor, you can use a double espresso or less ice cream.

If you want a milder and sweeter dessert, you can use more ice cream.

What is Affogato?

Affogato is an Italian dessert based on coffee and ice cream.

The classic idea is very simple:

A scoop of gelato or ice cream is placed in a small bowl, cup, or glass.

Then hot espresso is poured directly over it.

The heat immediately starts melting the surface of the ice cream, and the espresso gradually mixes with the cold, creamy dessert.

Because of this, the Affogato constantly changes while you eat it.

The first spoonfuls may have a clear contrast between hot espresso and firm ice cream.

Later, the result becomes more creamy and blended.

What does Affogato mean?

The Italian word affogato roughly means:

drowned

or

drowned in English.

The name simply describes that the ice cream is being “drowned” in espresso.

You may also encounter the term:

Affogato al caffè

which refers to the classic coffee version.

It is not a specific type of coffee bean or brewing method.

Affogato describes the dessert itself.

Is Affogato a coffee or a dessert?

Affogato is located somewhere between the two worlds, but is most often considered a dessert.

It contains espresso, but the main ingredient is usually ice cream or gelato, and it is typically eaten with a spoon.

It therefore functions differently than coffee drinks like:

  • Americano
  • cappuccino
  • Flat White
  • caffe latte
  • cortado.

Where does Affogato come from?

Affogato is associated with Italy.

The exact history of when and where the dessert was first made, however, is not very well documented.

It makes sense that Affogato could only develop after the advent of espresso, but there is no reliably documented invention date we can point to.

Instead, the simple combination of Italian espresso and gelato has evolved into a dessert that is served far beyond Italy today.

Therefore, it is more accurate to describe Affogato as a classic Italian coffee dessert than to claim that one specific person or café invented it on a specific date.

Classic Affogato recipe

For one serving, you will need:

Ingredients

  • 1 large scoop of vanilla ice cream or fior di latte gelato
  • 1 espresso

A practical espresso starting point can be:

18 g of coffee

↓

approx. 36 g of espresso

You do not necessarily have to use the entire double espresso.

Taste and adjust the ratio based on the ice cream and coffee you are using.

How to make Affogato step by step

1. Cool the bowl or glass

It is not necessary, but a cold bowl helps keep the ice cream firm for a little longer.

You can optionally put the serving glass or bowl in the freezer beforehand.

2. Add the ice cream

Place one large scoop of vanilla ice cream or gelato in the bowl.

Do this just before the espresso is brewed.

The ice cream should be cold and firm when the coffee is added.

3. Brew the espresso

Brew a fresh espresso.

A good starting point can be:

18 g coffee in

and around:

36 g espresso out.

The precise recipe depends on the coffee beans.

4. Pour espresso over the ice cream

Pour the espresso directly over the ice cream immediately after brewing.

You don't need to completely drown the entire ice cream.

It is precisely the combination of:

firm cold ice cream

and

hot liquid espresso

that makes Affogato interesting.

5. Serve immediately

Affogato should not stand for long before serving.

The ice cream begins to melt as soon as the espresso hits it.

Therefore, serve immediately with a spoon.

How much espresso should go into an Affogato?

There is no single mandatory ratio.

A good place to start is:

1 scoop of ice cream + 1 espresso.

If you use a large scoop of ice cream, a double espresso can provide a clearer coffee character.

If you use a smaller portion of ice cream, a single espresso may be plenty.

Experiment to find your preference.

Affogato is so simple that the ratio between coffee and ice cream very clearly changes the experience.

More espresso

Provides:

  • stronger coffee flavor
  • more bitterness and roast character
  • faster melting.

More ice cream

Provides:

  • more sweetness
  • more creaminess
  • milder coffee flavor experience.

Which ice cream is used for Affogato?

Fior di latte gelato is a classic choice.

Fior di latte roughly means “flower of milk” and is a simple, milk-forward gelato where the flavor of the coffee can have plenty of room.

Vanilla ice cream is also very common and works really well.

The advantage of vanilla is that:

  • the sweetness balances the bitterness of the espresso
  • the creamy texture provides contrast
  • vanilla goes well with many different coffee types.

You therefore do not need to find a specific Italian gelato to make a good Affogato at home.

A good vanilla ice cream works brilliantly.

Gelato or regular ice cream?

Both can be used.

Gelato typically has a different texture and serving temperature than regular dairy ice cream, but the principle is the same.

Above all, choose an ice cream that you think tastes good.

If the ice cream is very strongly flavored, it can easily overpower the espresso.

Therefore, relatively simple varieties such as:

  • vanilla
  • fior di latte

are particularly good starting points.

Which coffee beans are best for Affogato?

It depends on the Affogato you want.

The ice cream is sweet and creamy, so the espresso should ideally still be distinct.

Therefore, medium and dark roasted coffee beans often work really well.

Dark roasted coffee

Can provide clear notes in the direction of:

  • dark chocolate
  • cocoa
  • caramel
  • roasted tones.

This naturally pairs well with vanilla ice cream.

Medium roasted coffee

Can provide:

  • a bit more freshness
  • clear sweetness
  • more balance between roast and origin character.

Lighter espresso

Can also be used.

Here you can get a more modern Affogato with clearer:

  • fruitiness
  • florality
  • acidity.

This can be exciting, but it results in a completely different dessert than the classic dark espresso with vanilla ice cream.

Dark roasted coffee for Affogato

A darker espresso is an obvious place to start.

Sweet vanilla ice cream works well with coffee with notes reminiscent of, for example, chocolate and caramel.

That type of roast profile can also work well for Affogato because the coffee still stands out clearly alongside the sweet ice cream.

Does the coffee have to be very strong?

Affogato works best with concentrated coffee.

A classic espresso is therefore the obvious choice.

However, you do not need to try to make the espresso extra bitter or extra dark.

A good espresso should first and foremost taste good.

The ice cream already adds:

  • sweetness
  • richness
  • low temperature.

This can dampen some of the espresso's intensity.

Therefore, the espresso should have a clear character, but it does not need to taste burnt or extremely bitter.

Can you make Affogato without an espresso machine?

Yes.

A classic Affogato is made with espresso, but you can easily make a dessert in the same style without an espresso machine.

The most important thing is to use a relatively concentrated coffee.

An espresso maker (moka pot) is an obvious option.

It does not technically brew espresso, but it makes a concentrated and full-bodied coffee that works really well with vanilla ice cream.

Affogato with a moka pot

Brew the coffee as usual in your moka pot.

Then pour a relatively small amount of the concentrated coffee over the ice cream.

Because moka coffee and espresso are not exactly the same, the result will have a slightly different flavor profile.

But the combination still works really well.

Can you make Affogato with an AeroPress?

You can also do that.

AeroPress can brew a relatively concentrated coffee.

Use a recipe with less water than for a normal large cup and brew the coffee right before serving.

The result, again, is not classic espresso, but can still be used for an Affogato-inspired dessert.

Can you use filter coffee for Affogato?

You can, but regular filter coffee is usually far less concentrated than espresso.

If you pour a large amount of filter coffee over the ice cream, you therefore risk getting:

  • ice cream that melts very quickly
  • a thinner dessert
  • less clear coffee contrast.

If you have no other options, you can brew the filter coffee a bit more concentrated than usual and use a smaller amount.

But espresso or moka coffee are better starting points.

How hot should the espresso be?

The espresso should be used fresh after brewing.

It is the contrast between hot coffee and cold ice cream that is an important part of an Affogato.

You therefore do not need to let the espresso cool down.

If you pour completely cooled coffee over the ice cream, you will get a different dessert experience because the ice cream will not start to melt in the same way.

Why does the Affogato melt so quickly?

Because hot espresso is poured directly over frozen ice cream.

That is the point.

Affogato is not made to stand on the table for ten minutes before it is eaten.

It should ideally be served immediately.

If you feel the ice cream is melting too quickly, you can:

  • use a chilled bowl
  • use very firm ice cream
  • use a little less espresso
  • serve the coffee on the side and pour it over immediately before eating the dessert.

Should the espresso be served separately?

You certainly can.

At some cafés, the ice cream is served in one bowl and the espresso separately.

That way, the guest can pour the espresso over themselves.

This has several advantages:

  • the ice cream stays firm for longer
  • the guest decides the timing
  • the presentation is clear
  • the temperature contrast is preserved right up until the first bite.

It is also a really good way to serve Affogato at home for guests.

Affogato with chocolate

Chocolate and coffee work naturally together.

You can therefore add, for example:

  • a little grated dark chocolate
  • a few chocolate flakes
  • a small dusting of cocoa powder.

Keep the amount limited, though.

A classic Affogato works well precisely because of its simplicity.

If you add many extra ingredients, the character of the espresso can quickly disappear.

Affogato with nuts

Chopped nuts can add texture.

For example:

  • hazelnut
  • almond
  • pistachio

can work together with coffee and vanilla.

Use them as a small supplement rather than a main ingredient.

Affogato with ice cream other than vanilla

You don't have to stick to vanilla.

You can experiment with, for example:

  • chocolate ice cream
  • hazelnut ice cream
  • pistachio ice cream
  • caramel ice cream.

But the more flavor the ice cream has, the less room there is for the espresso.

If you want to taste the difference between different coffee beans, vanilla or fior di latte are therefore better.

Affogato with decaffeinated coffee

Yes.

You can easily make Affogato with decaffeinated espresso.

This is especially practical if the dessert is served late in the evening and you want to avoid regular coffee.

Use a decaffeinated coffee that can be brewed concentrated as an espresso.

Affogato vs. iced coffee

Affogato and iced coffee are two completely different things.

Affogato

  • dessert
  • hot espresso
  • ice cream or gelato
  • typically eaten with a spoon.

Iced coffee

  • coffee drink
  • served cold
  • can contain ice cubes
  • can contain milk
  • normally drunk from a glass.

So, Affogato is not about cooling down espresso.

It is about the contrast between hot coffee and frozen dessert.

Affogato vs. Iced Americano

An Iced Americano typically consists of:

espresso + cold water + ice cubes.

It is a black coffee drink without milk or ice cream.

Affogato, on the other hand, consists of:

espresso + dessert ice cream.

Therefore, they are only related in that they both combine espresso with something cold.

Affogato vs. espresso

Espresso is the coffee drink itself.

Affogato uses espresso as an ingredient.

When the espresso is poured over vanilla ice cream, it changes:

  • the temperature
  • the sweetness
  • the richness
  • the mouthfeel

of the entire coffee experience.

It can therefore be interesting to taste the espresso alone first and then experience how the same coffee changes in the Affogato.

How much caffeine is in Affogato?

The caffeine content comes primarily from the coffee.

The ice cream does not change the amount of caffeine in the espresso you use.

An Affogato made with one espresso will therefore contain roughly the amount of caffeine contained in that specific espresso.

The amount varies according to, among other things:

  • the coffee bean
  • the coffee dosage
  • the brewing recipe.

An Affogato with a double espresso will normally contain more caffeine than a version with one smaller shot.

Can children have Affogato?

A classic Affogato contains coffee and thus normally caffeine.

If you want a version without regular caffeinated coffee, you can use decaffeinated coffee.

Still, be aware that decaffeinated coffee is not necessarily completely free of caffeine.

Which bowl or glass should be used?

A small dessert bowl or a smaller glass works well.

The container should be large enough for:

  • a scoop of ice cream
  • espresso
  • a little room for melting.

A very large bowl can make the portion seem small, while a very narrow espresso cup can make it difficult to eat the dessert.

A transparent glass can be nice because you can see the espresso mixing with the ice cream.

The most important thing is not many ingredients.

It is the quality of the few things you use.

The vanilla ice cream should taste good on its own.

Use freshly brewed espresso

Brew the coffee immediately before serving.

Use suitable coffee beans

Choose a coffee with a profile that works well with the sweetness of the ice cream.

Serve immediately

Do not wait for all the ice cream to melt.

Keep it simple

Try the classic version first.

Then add variations if you wish.
